PANI PURI


Ingredients:
Puri:
Fine semolina (Sooji) 1/2 cup
Plain Flour (maida) 1/2 tbsp.
Clubsoda 3 tbsp.
Salt to taste

Pani:
Chopped Mint Leaves 1 1/2 cups
Chopped Coriander Leaves 1 tbsp.
Tamarind 1/3 cup
Ginger 1"
Green Chillies 4 to 5
Cumin Seed Powder (Roasted) 1 tsp.
Black Salt 1 1/2 tsp.
Salt to taste


Other Things:
Mashed slightly cooked potatoes with salt to taste 2 small
Tamarind Chutney
Method:

Puri:
1. Mix semolina, plain flour, soda water and salt. Knead well to make a semi-stiff dough. Cover it with clean wet cloth for about 10 minutes.
2. Divide the dough into forty equal portions and roll each portion into circles. Place each circle under damp cloth right after rolling.
3. Heat oil in a kadhai. Deep fry these circles, slightly pressing with a slotted spoon, until they puff up and are golden brown.
4. Place the puffed circles ("puris") on absorbent kitchen tissue. Extra puris should be stored in an air-tight container.

Pani:
1. Soak the tamarind in 1/2 cup of warm water for approximately 45 minutes. Strain out the pulp to get tamarind water.
2. Add mint leaves, chopped coriander, ginger, chillies and cumin seed. Add a little water and mix to a smooth consistency using a blender.
3. Transfer the paste into a large bowl. Add 1 litre of water, continuously mixing the contents with a spoon. Add black salt and salt. Mix well.
4. Refrigerate for about 2 hours to ensure proper blending.

To Serve:
Pani-Puri is to be eaten as soon as it is served.
1. Poke a small hole in the center of each puri.
2. Add small quantity of mashed fried potatoes as filling. Add a little imli chutney. Dip in pani so that puri is filled with it. Serve.

Rajasthani Malpua


Malpuas are rich, soft pancakes and are treasured in gujarati and rajasthani cuisines. The pancake (malpua) batter can be sweetened as in this recipe or the fried malpuas can be soaked in a saffron flavoured syrup.Traditionally they are served with creamy Rabdi.

Udaipur and Pushkar are famous for their scrumptious atte ka malpuas. Coarsely ground wheat flour is used in this recipe as it helps to make crisper malpuas. These malpuas are a special feature at festivities and are always prepared for Teej and Hariali amavas as a sacred offering to please the gods and goddesses.

Cooking Time : 30 mins.

Preparation Time : 15 mins.

Makes 20 malpuas.

Ingredients

1 cup coarsely ground whole wheat flour (gehun ka atta)
½ cup sugar
1 tablespoon fennel seeds (saunf)
10 peppercorns, crushed (optional)
¼ cup curds, beaten
½ cup milk

Other ingredients

ghee for deep frying(traditionally ghee is used,but you can also use any veg oil to fry)

For the garnish

2 teaspoons chopped pistachios

Method
1. Combine all the ingredients in a bowl and add approx. 1½ cups of warm water. Mix well to make a smooth batter. Leave aside for 45 minutes.
2. Heat ghee in a shallow kadhai (the ghee should be approximately 25 mm. (1") deep).
3. Pour a spoonful of the batter into the hot ghee and deep fry over a medium flame. Cook on both sides till the malpua is golden brown.
4. Drain on absorbent paper.
5. Repeat steps 3 and 4 for the remaining batter.
6. Serve hot, garnished with pistachios.

Tips
1.You will find coarsely ground wheat flour at some provision stores.
2.You can use 2 tablespoons of semolina with 1 cup whole wheat flour (gehun ka atta) instead of coarsely ground wheat flour for the above recipe.
3.The pancake (malpua) batter can be sweetened as in this recipe or the fried malpuas can be soaked in a saffron flavoured sugar syrup for more delicious and kid friendly version.


Spilt Green Moon Dal - Dal Bati


Ingredients

For Dal
Split green moon dal - 1/2 cup
Split white urad dal - 1/2 cup
Chana dal - 1/2 cup
Masoor Dal - 1/2 cup
Cumin Seeds - 1/2 spoon
Asafoetida - 1 pinch
Turmeric powder - 1/2 spoon
Chilli powder - 2 spoon
Coriander Powder - 1 spoon
Salt to taste


For Bati
Wheat Flour - 1 kg
Sooji - 250 gms
Salt - to taste
Coriander seeds - 1 spoon
Baking Soda - 1/2 spoon
Oil - 1/2 cup
Besan - 200 gms
Ghee for frying


Method
For Dal
Mix all the dals and wash it and boil the dal with turmeric. Let the dal be cooked nicely and smashed. Make a paste of turmeric, chilli powder, coriander powder, salt and water. Heat oil in a small pan temper cumin seeds and add hing. Add the paste and cook till the masala leaves oil. Add the boiled dal. Cook for 20 mins and add salt. Finish with lemon juice and coriander leaves.

For Bati

Mix atta, coriander seeds, sooji, besan, salt and cooking soda. Add oil to the mixture and mix well. Knead into soft dough and divide into equal balls of 1 inch diameter. Now cook the dumplings in boiling water for 1 hour. Deep fry them in ghee until golden brown. Serve along with dal a

Sev Khamani


સામગ્રી:

૫૦૦ ગ્રામ ચણાની દાળ,

૨૦૦થી અઢીસો ગ્રામ તેલ,

અર્ધી ચમચી રાઈ,

૧ ચમચી તલ,

૧ ચમચી વાટેલું લસણ,

૨ ચમચી વાટેલાં મરચાં,

૧ ચમચી ખાંડ,

૧ લીંબુ, ૨૫૦ ગ્રામ ઝીણી સેવ,

અર્ધો કપ કોપરાની છીણ,

૧ દાડમ,

૪ ચમચી ઝીણી સમારેલી કોથમીર, પ્રમાણસર મીઠું

રીત:

ચણાની દાળને છ કલાક પાણીમાં પલાળીને વાટો. હવે તેને કૂકરમાં વરાળથી બાફીને ચાળણાથી ચાળી નાખો.

એક વાસણમાં વઘાર માટે તેલ, રાઈ, તલ મૂકીને વાટેલું લસણ નાખી વધારો. તેમાં દાળ નાખો. મીઠું, વાટેલા મરચાં, ખાંડ નાખો. થોડું પાણી નાખો. લીંબુ નીચોવો.

સાંતળાઈ જાય એટલે નીચે ઉતારી ડીશમાં કાઢી તેની પર ઈચ્છા મુજબ ઝીણી સેવ, કોપરાની છીણ, લાલ દાડમ અને કોથમીર ભભરાવીને પીરસો.


Magaj or Magdal ( મગજ કે મગદળ )




Ingredients
સામગ્રી
  1. 500gm Mung Been Flour (Fine)
  2. 250gm Sugar
  3. 50gm Khoya
  4. 10 Almonds Scrapped
  5. 10 Pistachios Scrapped
  6. 2 Spoon Green Cardamom Powder
  7. 250gm Ghee
  1. ૫૦૦ ગ્રામ માગનો લોટ (કકરો)
  2. ૨૫૦ ગ્રામ ખાંડ
  3. ૫૦ ગ્રામ ખોયા (મોળો માવો)
  4. ૧૦ સમારેલી બદામ
  5. ૧૦ સમારેલા પીસ્તા
  6. ૨ ચમચી ઈલાયચી પાવડર
  7. ૨૫૦ ગ્રામ ઘી
Method
પદ્ધતિ
  1. Mix Mung Been Flour with 125gm Ghee, Mix them well.
  2. Heat remaining Ghee in pan, with slow flame of gas stove.
  3. Pour sifted Mung Been Flour in to heating Ghee, keep stirring.
  4. Add Khoya in heating mixture, stir continuously at low flame.
  5. Add Sugar, Scrapped Almonds and Pistachios, Green Cardamom Powder into it.
  6. Stir continuously and heat it till the mixture turn golden brown in color
  7. Turn of gas stove.
  8. Pour it into a plate greased with Ghee.
  9. Let it cool down for 15 minutes.
  10. Cut into squares when still it’s warm.
  11. Cool it further for 30 minutes.
  12. Magaj is ready to serve.
  1. મગના લોટ ને ૧૨૫ ગ્રામ ઘી થી બરાબર મોયી લો.
  2. બાકીના ઘીને કડાઈમાં ગેસ ઉપર ધીમા તાપે ગરમ કરો.
  3. મોયેલા મગના લોટને ઉકળતા ઘી માં હલાવતા-હલાવતા નાખો,
  4. થોડુક ગરમ થયા બાદ તેમાં મોળો માવો ઉમેરો અને હલાવતા રહો.
  5. મિશ્રણ ગરમ થયા બાદ તેમાં ખાંડ, બદામ અને પીસ્તાના ટુકડા તથા ઈલાયચી પાવડર નાખો.
  6. હવે જ્યાં સુધી મિશ્રણ હળવા બદામી રંગનું ના થાય ત્યાં સુધી ધીમા તાપે ગરમ કરો.
  7. હવે ગેસ સ્ટવ બંધ કરી દો.
  8. એક નાની થાળીને ઘી થી ચોપડી તેમાં આ મિશ્રણને પાથરી દો.
  9. ૧૫ મિનીટ સુધી ઠરવા દો.
  10. હુંફાળું હોય ત્યાં સુધીમાં પ્રમાણસર ચોસલા પડી દો.
  11. બીજી ૩૦ મિનીટ સુધી ઠરવા દો.
  12. મગજ પીરસવા માટે તૈયાર છે.

Shrikhand ( શ્રીખંડ )




Ingredients
સામગ્રી
  1. 1 Kg. Thick Curd
  2. 250gm Sugar Powder
  3. 2-3 Saffron
  4. 1 Spoon Warm Milk
  5. 1 Spoon Cardamom Powder
  6. 50gm Pistachios and Almonds (Chopped)
  1. ૧ કી.ગ્રા. જાડુ દહીં
  2. ૨૫૦ ગ્રામ દળેલી ખાંડ
  3. ૨-૩ કેસર
  4. ૧ ચમચી હુંફાળું દૂધ
  5. ૧ ચમચી ઈલાયચી વાટેલા
  6. ૫૦ ગ્રામ બદામ પીસ્તાની કતરી
Method
પદ્ધતિ
  1. Take a colander and spread a clean cotton cloth into it.
  2. Pour Curd into to drain water, Keep as it is for 3-4 hours.
  3. On other side rub saffron into warm milk until it dissolves completely in milk.
  4. Take drained curd in a bowl and add Saffron dissolved Milk, Cardamom Powder and Sugar into it.
  5. Churn this Curd using hand blander until everything dissolved in each other.
  6. Place in the Refrigerator for 2 hours.
  7. Garnish with chopped Pistachios and Almonds while serving.
  1. એક જાળિયામાં સ્વચ્છ સુતરાઉ કાપડ પાથરો.
  2. તેમાં દહીં મૂકીને ૩-૪ કલાક પાણી નીતારવા દો.
  3. બીજી બાજુ કેસરને હુંફાળા દૂધમાં ઘસીને ઓગાળી દો.
  4. હવે એક મોટા વાડકામાં નીતારેલું દહીં લો, અને તેમાં કેસર વાળું દૂધ, ઈલાયચી પાવડર અને ખાંડ ઉમેરો.
  5. હેન્ડ બ્લેન્ડરની મદદથી બધાને એકરસ કરી દો કે જેથી દહીંના દાણા એકરસ થઇ જાય.
  6. હવે વાડકાને ૨ કલાક જેવું ફ્રીજમાં મૂકી રાખો.
  7. પીરસતી વખતે બદામ અને પીસ્તાના ટુકડાથી શણગારો.

Sukhadi (સુખડી)




Ingredients
સામગ્રી
  1. 200gm Wheat Flour
  2. 50gm Jiggery
  3. 50gm Ghee
  4. ½ Spoon Cardamom Powder
  5. 1 Spoon Poppy Seeds
  6. Chips of Almonds
1. ૨૦૦ ગ્રામ ઘઉંનો લોટ
2. ૫૦ ગ્રામ ગોળ
3. ૫૦ ગ્રામ ઘી
4. ૧/૨ ચમચી ઈલાયચી પાવડર
5. ૧ ચમચી ખસ ખસ
6. બદામની ચીરીઓ
Method
પદ્ધતિ
  1. Take a small plate, grease with Ghee, Keep aside.
  2. Heat Ghee in a frying pan.
  3. After Ghee heat properly add Jiggery in it.
  4. Heat until Jiggery melts into Ghee.
  5. Continuously stir Jiggery so it doesn’t burns.
  6. Now add Wheat Flour into it.
  7. At low flame heat it until flour get light brown in color. Stir it continuously.
  8. Turn off gas stove and pour mixture evenly in prepared greased plate.
  9. Cool it for a while and cut into pieces, decorate with Poppy Seeds and Chips of Almonds.
  10. Nutritive Sukhadi is ready to serve.
1. એક નાની થાળીને ઘી થી ચોપડીને એક બાજુ એ મૂકી દો.
2. એક કડાઈમાં ઘી ગરમ કરવા મુકો.
3. ઘી ગરમ થઇ ગયા પછી તેમાં ગોળ ઉમેરો.
4. ગોળ ઘી માં ઓગળી જાય ત્યાં સુધી ગરમ કરો.
5. ગોળ ને હલાવતા રહો જેથી દાજી ના જાય.
6. હવે ઘઉંનો લોટ ઉમેરો.
7. ધીમા તાપે સતત હલાવતા હલાવતા લોટ હળવા બદામી રંગનો ના થાય ત્યાં સુધી ગરમ કરો.
8. હવે ગેસ સ્ટવ બંધ કરી દો અને મીશ્રણને તૈયાર કરેલી થાળીમાં સરખી રીતે પાથરી દો.
9. થોડુક ઠંડુ પડે એટલે તેના એક સરખા ચોસલા પડી દો અને ખસ ખસ તથા બદામ ની ચીરીઓ થી સજાવો.
10. પૌષ્ટિક સુખડી પીરસવા માટે તૈયાર છે.
