Misal Paav good for a quick bite










Ingredients:
1/2 cup Sprouted Matki/ Math
1/2 cup Moong
1/4 cup boiled and finely diced potatoes (optional)
1/2 tspn Mustard seeds
1/2 tspn jeera
pinch of asaefotida
1/2 tspn haldi
1 tspn red chilli powder
1/2 tspn ginger-garlic paste (optional)
1 tspn oil
1 cup finely chopped onion
1/4 cup finely chopped cilantro/ dhania leaves for garnishing
1 Lime sliced to sprinkle lime juice at garnishing
Pack of Farsan/ Chiwda

Receipe
1. Mix both the sprouts and wash well
2. In a pan add oil, add mustard seeds, when mustard seeds sizzle add pinch of asafoetida, ginger-garlic paste, haldi, chilli powder and add 2 cups of water and let this boil. When water starts boiling add both sprouts and let them cook. Do not overcook the sprouts.
3. Once you feel the sprouts are cooked (usually takes 10-15 min or even less) add finely chopped potatoes. Adding potatoes is optional. Traditionally my family adds potatoes because it gives a substance to the liquid and generally fills you up if this is solely what you are going to have for lunch or dinner which we as a Maharashtrian family do. After adding potatoes add another cup of water , salt and half the chopped cilantro (save the half for garnishing). Check the taste to see if you need more spicy or more salt. This gravy traditionally has to be spicy but you can add spice according to what you can handle. Accordingly add spice if necessary. Now on high flame bring the whole gravy to a full boil for a minute.
4. Traditionally you should see more liquid on the top than see the sprouts.
5. Now in a deep bowl add a fistfull of Farsan/ chiwda, pour the above liquid on top ( see to it you are pouring more of the liquid and less sprouts) Garnish it with finely chopped onions, cilantro and squeeze lime on top.
6. Serve the bowl with some warm "paav" (dinner roll) to go with it. I like the portuguese roll, or ciabatta slice or maybe a slice of french bread to go with it. Not because of their fancy names but because these breads are little firmer or harder than the usual soft ones and you can dip these and still take a bite of these. The other regular bread as soon as you would dip they wont make it to your mouth as they are so soft.
