VEGETABLE DOSA


Ingredients:
Parboiled rice-2 to 2 and a half cup
Raw rice-1cup
Urad dal-1cup
Carrot-100gm
Beans-100gm
Cabbage-100gm
Onion-2medium size(if preferred)
Chilli powder-1tea spoon
Oil-5 table spoon
Coriander leaves, Curry leaves and salt to taste

Preparation:
Batter:
Soak rice and dal separately for 3 hrs, grind it and mix it with salt.
Ferment this batter for 7-8 hrs. Now this batter is ready to make dosa.
Topping:
Chop carrot, beans, cabbage and onion lengthwise pieces.
Place a kadai on a hot stove and pour 1table spoon oil in it.
Now add onions to it. Shallow fry for 2 minutes. Now add all the vegetables, chilli powder and salt. Cover this with a lid and cook for 1 minute. Now add coriander leaves and curry leaves.
Vegetable dosa:
Place a tava on a hot stove, grease it with some oil.
Ladle the batter on this hot tava and spread it out.Make sure it is not very thin. Sprinkle the topping on the spreaded dosa. Add oil to it. Cover it with a lid. After dosa comes to golden brown, remove the lid and take the dosa out from the tava. Serve this dosa with coconut chutney, tomato chutney and onion chutney, sambar etc.
